Spring Pad Thai with Almond Tahini Sauce

We all love our comfort foods, right? However, we might not like how the comfort food will make us feel after we indulge. This dish is not only delicious, creamy, and super simple to make but it's loaded with nutritional benefits that makes it completely guilt-free!

Spring Pad Thai with Almond-Tahini Sauce


Serves 2

-2 zucchini (spiralized)

-2 carrot (spiralized)

-2-4 scallions

-handful of white button mushrooms

-a few asparagus stalks

-fresh chopped garlic


-pink salt + pepper

-chili pepper

Almond Tahini Sauce


-2 tablespoons of almond butter

-1/2 tablespoon of tahini sauce

-1/2 cup of almond milk

-dash of coconut aminos sauce

-garlic powder

-ginger powder

-pink salt + pepper


-In medium heated skillet, heat olive oil (or coconut oil)

-Add garlic, spiralized zucchini and carrots to skillet

-Add desired veggies, spices and cook for about 5-6 minutes (be careful not to overcook!)

-In separate bowl, add all sauce ingredients and mix until well combined, you might need to add more almond milk for a thinner sauce consistency

-Garnish with sesame seeds, cilantro and lime wedge
