Spiced Apple-Pumpkin Pie Recipe

YOU GUYS! This is probably one of my favorite recipe creations I’ve ever made! Everyone loves apple pie, everyone loves pumpkin pie..so, why not combine the two? I’m sure I can’t be the first person to think of combining these two fall favorite ingredients to make one delicious pie, but I promise you this recipe is a baking game changer. The pie can be a little messy but HEY, what pie recipe do you know that’s not messy BUT delicious?! Pie is meant to be fun and messy so, go with it!

Apples are an excellent source of plant based fiber, disease fighting antioxidants and help protect against diseases like cancer, alzheimer’s and Parkinson’s disease. I say it in all of my recipe posts, nature has provided us with exactly what our body needs. Whole plant foods from the earth provide our body with optimal nutrition and wellness, if eaten close to their natural, earth’s state as possible.

Pumpkin is another excellent source of plant based fiber, and a great digestive aid. Pumpkin helps regulate the digestive system helping manage weight loss and help boost eye sight. Pumpkin is becoming an increasingly popular ingredient in soups, sauces, and salads. So..EAT UP!

Using my Clean Coconut Flour Pie Crust recipe, I created this apple-pumpkin combination filling on a whim using common clean ingredients, it’s super easy to make and insanely light, and delicious!


Spiced Apple-Pumpkin Pie Recipe

Apple-Pumpkin Pie Filling Ingredients: -4 or 5 organic apples, peeled and diced -1/4 tsp pink himalayan salt or sea salt -1 tsp cinnamon (or pumpkin pie spice) -1 tbsp coconut sugar -1 tbsp maple syrup (or local honey) -3 tbsp organic pumpkin puree (I use the brand Farmer’s Market – it’s non-GMO in a BPA-free can) -1 1/2 tablespoon coconut flour -1 tbsp coconut oil

Pie Filling Directions: -Preheat oven to 400 degrees -In a large bowl combine all ingredients and mix well -In oven safe bowl, bake combination for 6-8 minutes -Set aside -Once crust has been baked, add filling to crust, if you have additional dough cut into strips and place on top of pie filling -Bake for an additional 8-10 minutes -Set aside to cool and ENJOY!

ADDED BONUS! Top with Coconut Bliss’ “Naked” Flavor Coconut vegan ice cream, (or make your own vegan ice cream) and ENJOY!

Clean Coconut Flour Pie Crust Ingredients: Ingredients: -1/2 cup of melted organic coconut oil -2 eggs or flax eggs if vegan*  (combine 1 tbsp of ground flax seeds with 3 tbsp water) -1/4 tsp pink himalayan salt or sea salt -1 tsp cinnamon -3/4 cup coconut flour

-3 tbsp honey or maple syrup





Crust Directions: Directions:

-Preheat oven to 400 degrees -Beat coconut oil, eggs (or flax eggs), salt and honey (or maple syrup) together until well combined -Add coconut flour

-Grease 9″ pan with coconut oil or coconut butter (I’m obsessed with Earth Balance’s Coconut spread) -Roll out dough over greased pan and prick dough with fork edge -Bake 8-10 minutes


-Add filling to pie crust, if there is extra dough- cut into strips and place on top of pie! -Bake for an additional 8-10 minutes -Set aside to cool and enjoy!
