PINK PITAYA OVERNIGHT OATS

ingredients::

•5 tbsp gluten free rolled oats

•2 tbsp chia seeds

•pink pitaya powder (i use suncore foods brand)

•almond/cashew milk


directions::

1. blend pitaya powder + almond milk together

2. in a mason jar, add pitaya milk, oats + chia seeds and stir until well combined

3. store in your refrigerator overnight (or a min. of 4hrs) so oats + chia seeds plump up

4. add desired toppings (i added banana, homemade wild blueberry-cashew butter ‘nola + chia seeds)

5. give thanks + enjoy!
