Peanut Butter Pumpkin Granola Bars

Let’s get real. Breakfast is the most important meal of the day, yes. While everyone knows that, no one seems to follow through with it! I hear all too often, “I’m not a breakfast person,” or “I have no time in the morning,” or “I’d rather get the extra sleep then wake up early to eat.” Wait, what?!


I understand, the issue of time. There never seems to be enough time in the day, and we all are always in a rush to get things done! Proper prior planning can prevent you from overeating throughout the day and making other unhealthy lifestyle choices. I am a firm believer in the cooking once, eat twice mantra. Cooking an abundance of food once, twice or three times a week max and having food for every meal of the day already prepped, cut, washed and cooked!

This delicious, super simple recipe to make takes about 20 minutes of prep/cook time and the granola bars can last up to two weeks in the refrigerator, and a few months in the freezer! Homemade is always the way to go when it comes to the food we put into our bodies, making these super simple granola bars we can grab on the go in the morning on snack on during the day are loaded with fiber, protein, dairy and gluten free, and vegan!

Peanut Butter Pumpkin Granola Bars


Ingredients: -1 1/2 cups packed and pitted organic dates -1/2 cup of peanut butter (I used Woodstock’s Classic Smooth Peanut Butter – it’s organic, non-GMO and divine!) -1/2 cup of gluten free rolled oats -1/2 cup of roasted almonds -1/2 cup of pumpkin seeds -1 tablespoon ground flax seeds -1 tablespoon of cinnamon

Directions: 1. If dates are not sticky, soak in water for about 10 minutes 2. Add pitted dates to food processor and pulse until dates are broken down into small pieces. Continue to push mixture down with a spoon or spatula until processed into a ball dough mixture. 3. Add peanut butter, gluten-free oats, almonds, pumpkin seeds, ground flax seeds, and cinnamon and pulse until well combined. 4. Line a tray with parchment paper or plastic wrap (if you’re using plastic wrap, tape the sides down to the tray so it doesn’t get difficult to manage and spread out the sticky mixture). Pat down mixture with spoon to spread out and flatten. 5. Transfer to freezer to set for 1-2 hours. 6. Once set, slice the granola into bars!
