Goji Berry-Orange Rhubarb Chutney

𝐆𝐎𝐉𝐈-𝐎𝐑𝐀𝐍𝐆𝐄 𝐑𝐇𝐔𝐁𝐀𝐑𝐁 𝐂𝐇𝐔𝐓𝐍𝐄𝐘⁣⁣


ingredients::⁣⁣

•6 stalks rhubarb⁣⁣

•1/2 cup goji berries⁣⁣

•1/2 juice of orange⁣⁣

•3/4 cup apple cider vinegar⁣⁣

•1/2 cup chopped red onion⁣⁣

•1 tbsp orange peel⁣⁣

•4-6 tbsp coconut sugar⁣⁣

•3/4 tsp. ground ginger⁣⁣

•1/2 tsp. cumin⁣⁣

•1/2 tsp. ground cinnamon⁣⁣

⁣⁣



directions::⁣⁣

1. add goji berries, orange juice, orange peel, apple cider vinegar, coconut sugar, ginger, cumin + cinnamon to a medium sauce pan and bring to a boil⁣⁣

⁣⁣

2. add rhubarb + onion and reduce to medium heat stirring frequently. cook for about 5-10min to allow chutney to thicken⁣⁣

3. allow chutney to cool down before serving ⁣⁣

⁣⁣

4. give thanks + enjoy!⁣⁣
