There was a period of about four months where every morning I ate overnight oats. I was addicted, obsessed..I was all about it. They’re just so easy and sometimes I prefer the extra fifteen minutes of sleep in the morning rather than getting up and making breakfast- I’m human, okay!
I made this overnight oats recipe with my best friend Andrew when I was visiting him in Florida, (check out Andrew’s website: Millennial Kitchen, he’s amazing!) and he was hooked instantly.
A similar concept to my chia pudding recipe, instead of chia seeds I use gluten free oats, put them in a jar add nut milk and refrigerate overnight! SO simple. One try and you’ll be hooked too!
Clean Chick’s Overnight Peanut Butter Oats
Ingredients:
3 tablespoons gluten free rolled oats
1 tablespoon organic peanut butter (or almond putter)
2 tablespoons raw hemp seeds (1 tbsp add in, the other for garnish)
1/2 tablespoon coconut sugar (optional- the peanut butter provides its own sweetness)
sprinkle of cinnamon
almond milk (or any nut milk)
topped with strawberries & blueberries
Action:
-Add all ingredients in mason jar and stir. -Top with hemp seeds and fruit.
