This cauliflower vegan alfredo pasta sauce is every bit as creamy, rich and delicious as you could imagine! Transitioning to a cleaner lifestyle does not mean you have to give up old indulgences – and alfredo sauce can still be enjoyed. So, ditch the jarred alfredo sauce that is loaded with artificial ingredients, preservatives and go for the healthier, dairy-free, do it yourself, plant-based version – your body will thank you for it.
Cauliflower is such a versatile vegetable that I truly recommend getting comfortable cooking and experimenting with. You can make an easy gluten free pizza crust from mashed cauliflower, delicious roasted garlic cauliflower mash, cauliflower buffalo wings, or make creamy pasta sauces like this one.
Vegan Cauliflower Alfredo Pasta
Ingredients: (Serves 4) -3 cups of organic chopped cauliflower -3 cloves of garlic -2 tablespoons extra virgin olive oil (or coconut oil) -1 1/2 cup of almond milk -juice of 1/2 lemon -1 tablespoon nutritional yeast -Salt and pepper -1 teaspoon ground ginger powder* -1 teaspoon chili powder*
-8 oz. gluten free linguine/fettucine (I used Ancient Harvest) -2 cups organic broccoli florets -3 cups chopped baby kale or culy kale
*Optional to add additional spices, but I think it adds a nice kick to the dish!

Vegan Cauliflower Alfredo Pasta

Directions: 1. Sauté minced garlic in olive oil until golden (about 3 minutes) in medium pan
2. Add almond milk, salt, pepper and spices and bring to a small boil. Add chopped cauliflower florets, cover and let simmer for 15-17 minutes until cauliflower is tender.
3. Once fork tender, transfer tender cauliflower and almond milk mixture to food processor or blender.
4. Add lemon juice, nutritional yeast, and 2 tablespoons additional almond milk (if you’d like) and blend for 2-3 minutes
5. Cook gluten free pasta al-dente about 6-8 mintues – do not overcook!
6. Add broccoli to same pan, and steam for five minutes, add kale and sauté for 2-3 minutes until it’s dark green
7. Add pasta, caulfilower sauce to broccoli and kale and mix together until pasta is evenly coated with sauce
8. Serve and ENJOY!
Cook cauliflower and almond milk for 15-17 minutes, until fork tender
Add cauliflower and almond milk to food processor, add lemon juice + nutritional yeast (additional almond milk if you’d like)
Let mixture blend for 2-3 minutes or until creamy
Add sauce to cooked pasta, broccoli and kale and stir
ENJOY!
