I absolutely LOVE, LOVE, LOVE making zoodles! For those of you that don’t know zoodles are just zucchini noodles..zoodles! Not only are they delicious, but they are fun to say and are such a healthier alternative than typical wheat pasta!
Serves 2 Ingredients: -1 large zucchini (spiralized into noodles – you can use this nifty little tool here!) -1 avocado -2 tablespoons of lemon juice -3 cloves of garlic (to taste) -1/4 cup freshly picked basil -2 tablespoons extra virgin olive oil -salt & pepper to taste -crushed red pepper to taste
Action: 1. Blend avocado, basil, lemon juice, garlic, extra virgin olive oil, salt, pepper & crushed red pepper together in a food processor 2. Spiralize zucchini into zoodles! 3. Pour avocado pesto over zoodles 4. EAT!!
